Description
Born in France, Simon Herfray began his pastry education in the local Vendee region, before earning a master’s degree in pastry and bakery at the local vocational pastry school. He’s worked at renowned bakeries and restaurants like Aubaine and Blue Bird in London, traveled to Australia to bolster his technique, and entered the NY pastry scene as the Executive Pastry Chef at Falai LLC in 2009 before lending his talents Cafe M. Today, he whips up spectacular desserts for the sister restaurants Bacchus and La Defense Bistro in Brooklyn, and plans to open French’Encas, a company designed to teaching others the art of French cooking through classes and workshops.
Located in the heart of East Harlem, Atelier Sucré's commercial kitchen offers a space to create delightful, delectable sweets. We welcome students of all experience-levels and provide all the equipment and tools needed. A kitchen is a special place for chefs; it's where the magic happens.

Overall this class was great- I learned a lot and we made some delicious treats. It did seem like chef Jen was in her own and probably should have had an assistant helping her set up and run the day- we were not allowed in to the space before class actually started, which was a problem given that it was below freezing outside. Though the room was small there were plenty of places we could have sat while setup was still happening. We were let in late, because we knocked on the door and begged to be let inside. The class also went over time by about half an hour. It seemed well run up until that point, so I suspect it was really a matter of needing 2 pairs of hands to manage a full class.

Amazing class! Instructors were helpful and engaging. Beginner-friendly. Croissants turned out to be delicious and looked just like pastries you’d buy from a cafe. Definitely recommend this class!

My daughter and I had a lot of fun doing this class. We enjoyed our table partners and the instructor was great. The macarons are delicious. We went home with plenty to share with family and friends.

Chef Jen was so funny and a great teacher! We accidentally made a mistake and ended up not being able to make any pan au chocolat and she gave us hers. Sweetest lady ever! Definitely want to take more classes here :)

Taking this course was one of the most fun and educational experiences ever! The course is designed to concentrate a multiple day project into a few hours in which the students get to participate in every step of the process from creating the dough, doing the turns, and forming the croissants. Chef Makenna and Assistant Paola (super stars) were wonderful in presenting clear instructions, excellent demonstrations and giving individual attention. I brought home 8 super large croissants which were gladly consumed. I can't wait to take another class.

This class was terrific. Chef Jen was engaging, informative, and a real delight. The hands-on approach was broken down into easy steps for beginners including the science behind the process for the different steps. The finished product was delicious and everyone wished for more croissants to take home, even though we each left with 4 croissants total (1 traditional, 1 ham & swiss, 2 pain au chocolat). I definitely recommend this class.

It was great. The only inconvenient was it started 30 minutes later than it was posted on coursehorse and they didn’t even let us in until it started.

Very beginner, everything already measured out, so there isn't really much cooking, more assembling. If thats your vibe go for it! Could also benefit from some music playing because definitely awkward silences at times.

Great class!! My daughter and I really enjoyed it.
