Cara Tannenbaum

Teaches at The Institute of Culinary Education

Cara Tannenbaum’s experience in the food industry totals more than 22 years. After earning her master’s in anthropology at SUNY Albany, Tannenbaum initially pursued a career as an archaeologist but became disenchanted with the academia. While her husband was teaching at Yale, she took a job at a European-style bakery and climbed to lead baker. She enrolled in the New York Restaurant School and followed graduation with stints at Orso and Woods. In 1986, Tannenbaum opened her own restaurant, Quarropas, in White Plains, focusing on American food. Tannenbaum began teaching at ICE in 1997. She says, “My culinary voice is straightforward and clear — simple, delicious preparations based on knowledge of ingredients and technique are the way to go. I help my students find their voice first with understanding, and then with hard work. I encourage them to read all they can about food, get involved in every food related activity that they can, travel, eat, and soak it all up.”
