Known as the "king of carbonara," Luciano Monosilio is the chef at Pipero al Rex (Pipero at the Rex Hotel) in Roma. His cuisine is simple and has clear flavors, changes often, and is perfect for a rising chef under 30 years old. Identità Golose's Federico De Cesare Viola puts it best when he says, "Were we to compose the future national team of Italian cuisine, Luciano Monosilio would certainly be among the summoned players." 
 
Sarah Grueneberg is the James Beard Award-winning chef behind Chicago's own Monteverde Restaurant & Pastificio in the West Loop. Sarah is an expert in all things pasta, and her restaurant specializes in fresh pasta made daily, along with other dishes including antipasti, secondi, and dolci. Sarah has also participated in Identità Golose Chicago in 2016, featuring her signature "Cacio Whey Pepe." In addition to her recognition from the James Beard Foundation, she has also received numerous other awards, including: Food & Wine’s "Best Restaurant in America" and in Bon Appetit’s American 50 Best.
